You cannot cut rider to pieces. He’ll just reform due to Hellfire and magic and immortality. RIder however, can kill Wolverine easily with his chain which can grow to limitless lengths, hellfire him, and/or Penance stare him.

But Wolverine has Adamantium which is the strongest metal in the MCU world. It is impenetrable and Wolverine’s claws can cut through anything even Thanos strong and thick purple skin.
