Gandalf can’t touch the One ring because it would corrupt him and he would become a terrifying wizard like Saruman. It’s the same reason Galadriel refused the One ring. The One ring can only be worn by Sauron. Anyone else who wields it would be under his control, even Gandalf the grey/ white.

As one of the Maiar, Gandalf was not a mortal Man but an angelic being who had taken human form. Along with the other Maiar who entered into the world as the five Wizards, he took on the specific form of an aged old man as a sign of his humility.

It was that resurrection that Gandalf transformed from Gandalf the Grey to Gandalf the White. By taking his title, Gandalf became the leader of the wizards and was given authority to punish Saruman. Another difference is that Gandalf the White could be harsher and applied his powers more readily.

Who trusted Sauron? Gandalf is overall more powerful as Gandalf the White. He is far more charismatic and has some limited foresight. He was able to defeat Saruman, breaking Saruman’s power over Theoden and breaking his staff after the Ents took Isenguard.

Gandalf would beat Dumbledore in a fight between the two, but Dumbledore is more powerful in comparison to his respective world. Gandalf wouldn’t be able to beat Sauron at his full power, but Dumbledore would crush Voldemort any day.

I have no reference handy, but in the movie at least it was implied that Gandalf knew we would die if he went to Moria. It reflects his great courage that he went to Moria anyway, and that he stood against the Balrog to buy the others time, though he knew it was suicide.

Gandalf was granted the ability to return to his body by Eru Iluvatar, Tolkien’s equivalent of the Judeo-Christian God. He was sent back “until his task was done.” His task was simply to be the enemy of Sauron and help the people of Middle-earth defeat him. It was necessary for Gandalf to die briefly, though.

As the only one of the five Istari to stay true to his errand, Olórin/Gandalf was sent back to mortal lands by Eru, and he became Gandalf once again. Gandalf was carried to Caras Galadhon in Lothlórien, where he was healed, given a new staff, and clothed in white, and thus became Gandalf the White.
